
Ingredients:
For the Broth:
• 1 Chinese leaf, sliced and washed
• 120g shiitake mushrooms, sliced
• 1 white onion, sliced
• 2 garlic cloves, finely chopped
• 7g ginger, finely chopped
• 1 red chili, deseeded and finely chopped
• 70g spaghetti, broken into smaller pieces
• 300ml chicken stock
• 150ml water
• Sea salt flakes
• Ground black pepper
• Olive oil
For the Pork Loin Steak:
• 2 pork loin steaks
• 1 garlic clove
• A sprig of thyme
• 10g butter
• Sea salt flakes
• Ground black pepper
For Garnish (optional):
• 1 radish, sliced

Instructions:
1. Heat some olive oil in a pot over medium heat. Add the sliced onion and cook until soft. Then add the chopped garlic and ginger, and cook until fragrant.
2. Stir in the sliced shiitake mushrooms and cook until tender. Add the sliced Chinese leaf, a pinch of salt, and mix well.
3. Add the finely chopped red chili and pour in the chicken stock. Stir in the broken spaghetti pieces and add water. Bring the mixture to a boil, then reduce the heat, cover with a lid, and simmer for about 30 minutes.
4. While the broth is simmering, season the pork loin steaks with sea salt flakes and ground black pepper. Heat a frying pan with olive oil over medium heat, and fry the steaks until both sides are golden. Add the sprig of thyme, garlic, and butter to the pan. Baste the steaks frequently until cooked. Once cooked, cut the steaks into strips for serving.
5. Season the broth with salt and ground black pepper to taste. Ladle the broth into bowls and add the sliced pork loin steak. Optionally, garnish with sliced radish. Enjoy your Chinese leaf broth with fried pork loin steak!
