A hearty vegan comfort dish: miso white beans with tomatoes, macaroni, and Chinese cabbage.

Ingredients

  • 100g dried white beans, soaked overnight (about 12 hours)

  • 1 shallot, chopped

  • 3 garlic cloves, finely chopped

  • 255g tomatoes, chopped

  • 1/2 Chinese cabbage, shredded

  • 1 tbsp red miso paste

  • 1 tsp dried oregano

  • 100g macaroni

  • 500ml water (plus extra if needed)

  • Olive oil

  • Sea salt flakes

  • Ground black pepper

  • Fresh parsley, finely chopped (for garnish)
