Ingredients:

➡️Fried Tofu:

  • 280g firm tofu, cut into strips
  • Olive oil for frying

➡️Tomato Salad:

  • 250g piccolo cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • Handful of chopped coriander
  • 1 red chili pepper, deseeded and finely chopped
  • 1 tbsp capers
  • Sea salt flakes
  • Ground black pepper

➡️Garlic Rosemary Oil:

  • 3 tsp olive oil
  • 2 garlic cloves, finely chopped
  • Sprig of rosemary

➡️Spicy Salt:

  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp rock salt

Instructions:

1. Prepare Spicy Salt:

  • Toast cumin seeds and mustard seeds until cracked.
  • Grind them in a mortar and pestle with rock salt. Set aside.

2. Make Garlic Rosemary Oil:

  • Heat olive oil in a pan over medium heat.
  • Fry chopped garlic and rosemary leaves until fragrant. Set aside.

3. Tomato Salad:

  • Mix cherry tomatoes, red onion, coriander, and capers.
  • Season with salt and pepper.
  • Add the garlic rosemary oil and mix well. Set aside.

4. Fry Tofu:

  • Heat olive oil in a frying pan over medium heat.
  • Fry tofu strips until golden brown and crispy.

5. Assemble:

  • Place fried tofu in the center of a plate.
  • Surround it with the tomato salad.
