
Ingredients:
➡️For the beef mince stew:
• 500g beef mince • 200g smoked bacon, sliced • 1 brown onion, finely chopped • 2 medium carrots, finely chopped (about 240g) • 1 celery stick, finely chopped (about 100g) • 125ml red wine • Olive oil • Sea salt • Ground black pepper
➡️For the tomato sauce:
• 400g chopped tomatoes • 3 garlic cloves • 30g fresh basil leaves • 1 tbsp red miso paste • 1 tsp dried oregano • Sea salt • Ground black pepper
➡️For White sauce:
• 40g butter • 2 tbsp plain flour • 400ml milk • Sea salt • Ground black pepper
➡️For assembling the lasagne:
• 12 lasagne sheets • 15g grated parmesan cheese • 125g grated mozzarella cheese • Fresh parsley, finely chopped (for garnish)
Method:
1. Prepare the tomato sauce:
In a blender, combine chopped tomatoes, garlic cloves, basil leaves, red miso paste, dried oregano, sea salt, and black pepper. Blend until smooth. Set aside.
2. Cook the beef mince stew:
Heat olive oil in a sauté pan over medium heat. Add sliced smoked bacon and cook until golden brown. Add finely chopped onion, carrots, and celery. Cook until tender. Pour in the red wine and let it simmer until reduced by half. Add the beef mince, stirring well to combine. Pour in the prepared tomato sauce, cover with a lid, and simmer for about 40 minutes.
3. Make the white sauce:
In a separate saucepan, melt butter over medium heat. Add plain flour and stir until combined. Gradually pour in the milk, whisking constantly until the sauce thickens. Season with salt and black pepper to taste.
4. Assemble the lasagne:
Preheat the oven to 200°C (with fan). Soak the lasagne sheets in hot water. In a baking tray, layer the beef mince stew, lasagne sheets, and white sauce. Repeat the layers until all ingredients are used, finishing with a layer of white sauce on top. Sprinkle grated parmesan and mozzarella cheese over the top.
5. Bake:
Place the assembled lasagne in the preheated oven and bake for about 25 minutes, or until the cheese is golden and bubbly.
6. Serve:
Garnish the cooked lasagne with finely chopped parsley before serving. Enjoy your delicious homemade beef lasagne!
