
Pan-frying fish is a quick and easy method. I prefer to coat the fish with flour to make it dry and crisp up the skin. To accompany the oily fish, I recommend serving it with boiled brown rice flavored with turmeric and cloves for both flavor and color. Pair it with a zesty green sauce to add a punch to the dish. Ingredients
➡️For the Sea Bass Fillet
- 2 sea bass fillets
- Zest of 1 lemon
- Juice of 1/2 lemon
- ground rock salt
- ground black pepper
- 1 tablespoon plain flour
- 1/2 teaspoon cayenne pepper
- Olive oil or vegetable oil
- Sprig of thyme
- 15g butter
➡️For the Spicy Green Sauce
- 30g toasted pumpkin seeds
- 1 shallot, peeled and toasted
- 1 green chili pepper, toasted
- 2 garlic cloves, peeled
- 15g parsley
- 15g coriander
- 1 tablespoon capers
- 1 tablespoon extra virgin olive oil
- ground rock salt
- ground black pepper
➡️For the Brown Rice
- 1 cup brown rice (70g)
- 2 cups water
- 1/4 teaspoon turmeric powder
- 3 cloves
- Sea salt flakes
➡️For Garnish
- Handful of baby spinach – Chives, finely chopped

Method:
1. Prepare the Spicy Green Sauce:
- Toast the green chili pepper and shallot in a dry frying pan over medium heat until tender and slightly crispy.
- Add pumpkin seeds to the pan and stir well. Toast for an additional 3-4 minutes.
- Transfer the toasted ingredients to a mixing bowl. Add parsley, coriander, garlic, capers, and olive oil.
- Using a stick blender, blend until smooth. Season with salt and pepper to taste. Set aside.
2. Cook the Brown Rice:
- In a pot, combine brown rice, cloves, turmeric powder, and sea salt flakes.
- Add 2 cups of water and mix well. Bring to a boil, then reduce heat and simmer for about 20 minutes or until rice is cooked.
3. Prepare the Sea Bass Fillet:
- Season sea bass fillets with lemon zest, lemon juice, salt, and pepper.
- In a tray, mix plain flour and cayenne pepper. Coat the sea bass fillets with the flour mixture.
4. Cook the Sea Bass Fillet:
- Heat olive oil or vegetable oil in a frying pan over medium heat. Fry the sea bass fillets skin side down.
- Add butter and a sprig of thyme to the pan. Baste the fillets frequently and cook for about 5 minutes or until cooked through.
- Carefully flip the fillets and cook for an additional minute.
5. Assemble the Dish:
- Place a handful of baby spinach on each serving plate. Top with cooked brown rice.
- Arrange the fried sea bass fillets on the side.
- Add spicy green sauce on the side.
- Garnish with finely chopped chives.
