This “Smoky Garlic & Mushroom Tweaked Boulangère Potatoes” is the perfect comforting side dish for your Christmas feast. Layers of tender, finely sliced baked potatoes are interwoven with rich, earthy chestnut mushrooms and caramelized red onions, creating a savory, melt-in-your-mouth sensation with every bite. Infused with the warmth of smoked paprika and garlic butter, this dish elevates traditional potatoes to new heights. Finished with a golden crust of parmesan and a sprinkle of fresh parsley, it’s a sophisticated yet homely addition that brings both elegance and indulgence to the holiday table.

Ingredients

  • 800g floury potatoes, thinly sliced

  • 250g chestnut mushrooms, finely chopped

  • 1 red onion, peeled and sliced

  • 1 tbsp balsamic vinegar

  • 100g butter

  • 3 garlic cloves, peeled and grated

  • 1 tsp smoked paprika

  • 40g parmesan cheese, grated

  • Rapeseed oil

  • Ground rock salt

  • Ground black pepper

  • Parsley, finely chopped (for garnish)

Directions

  • Caramelize the Onion:
    Heat a sauté pan over medium heat, add some rapeseed oil, and fry the red onion until soft. Stir in the balsamic vinegar, reduce the heat, cover, and simmer for 5 minutes. Continue to cook slowly until the onion is caramelized. Season with salt and pepper, then set aside.
  • Prepare Garlic Paprika Butter:
    Melt the butter in a small saucepan over low heat. Stir in the grated garlic and smoked paprika, then remove from the heat. Set aside.
  • Layer the Potatoes and Mushrooms:
    🔹Arrange a layer of sliced potatoes over the caramelized onion in the sauté pan.
    🔹Brush the potatoes with the garlic paprika butter and season with salt and pepper.
    🔹Add a layer of chopped mushrooms over the potatoes.
    🔹Repeat layering (potatoes, butter, seasoning, and mushrooms) until you’ve used up the ingredients, finishing with a layer of potatoes on top.
  • Cook in the Oven:
    Cover the pan with a lid and bake in a preheated oven at 150°C (fan) for about 2 hours.
  • Add Parmesan and Finish Cooking:
    Remove the lid, sprinkle the grated parmesan over the top, increase the oven temperature to 200°C, and bake uncovered for an additional 15 minutes.
  • Garnish and Serve: Once out of the oven, sprinkle with chopped parsley. Serve as a delicious side dish!
