Ingredients
- For the Meatball:
500g pork mince (%5 fat)
1 tsp light soy sauce
1 egg
2 slices white bread, turned into breadcrumbs
3 garlic cloves, grated
8g ginger, grated
1 tsp smoked paprika
Ground rock salt, to taste
Ground black pepper, to taste
- For the Sauce:
2 shallots, finely chopped
60g celery, finely chopped
140g carrot, peeled and finely chopped
100g chestnut mushrooms, sliced
100ml white wine
300ml water (for boiling spaghetti)
1 tsp tomato purée
1 tsp dried oregano
100ml water (for sauce)
15g butter
Parmesan cheese, grated
Sea salt flakes, to taste
Ground black pepper, to taste
Rapeseed oil (for frying)
Parsley, finely chopped (for garnish)
- For the Pasta:
120g dried spaghetti
Directions
- Make the Meatballs:
🔹In a bowl, mix pork, soy sauce, egg, breadcrumbs, garlic, ginger, paprika, salt, and pepper.
🔹Form 7-8 meatballs and set them aside. - Cook the Meatballs:
🔹Heat some rapeseed oil in a large pan over medium heat. Sear the meatballs until golden brown on all sides.
🔹Remove the meatballs and set them aside. - Make the Sauce:
🔹In the same pan, add the chopped shallots, celery, carrots, and mushrooms. Fry until fragrant.
🔹Pour in the white wine, stir to deglaze the pan, and let it simmer for a minute. - Cook the Spaghetti:
🔹Add the dried spaghetti directly into the pan. Pour 300ml water over it and mix gently.
🔹Cover the pan with a lid and let it simmer for about 10 minutes, until the spaghetti is cooked. - Finish the Sauce:
🔹 Stir in the tomato purée, dried oregano, and 100ml water. Cook for 1-2 minutes.
🔹Add grated Parmesan, salt, pepper, and butter. Stir until smooth.
🔹Return the meatballs to the pan, cover, and let everything simmer for another 10 minutes. - Serve:
🔹Sprinkle chopped parsley over the meatballs.
🔹Serve the spaghetti in bowls, top with meatballs, and garnish with more Parmesan and parsley.
