Made with tender chicken breast, fresh cavolo nero, carrots, red pepper, and al dente linguine, this one-pan dish brings comfort and nutrition in every bite. Minimal cleanup, maximum flavor. Ingredients
- For the marinated chicken:
2 chicken breasts, chopped
3 garlic cloves, grated
8g fresh ginger, grated
½ tsp smoked paprika
Ground rock salt, to taste
Ground black pepper, to taste
A drizzle of rapeseed oil
- For the pasta dish:
1 red bell pepper, sliced
1 shallot, peeled and chopped
100g carrot, peeled and chopped
50g cavolo nero, washed
100g linguine (uncooked)
½ tsp chilli flakes
400ml water
20g butter
Grated Parmesan (optional, for serving)
Directions
- Marinate the chicken: In a bowl, mix the chopped chicken with garlic, ginger, paprika, salt, pepper, and a little rapeseed oil. Set aside to marinate while you prep the veggies.
- Prep the vegetables: Slice and chop the red pepper, shallot, and carrot. Wash the cavolo nero and set aside.
- Cook the chicken: Heat a bit of rapeseed oil in a large frying pan over medium heat. Add the marinated chicken and cook until lightly golden.
- Add the veg: Push the chicken to one side of the pan. Add the shallot, red pepper, and carrot. Sauté until tender, then mix everything together.
- Add linguine & spice: Place the dry linguine in the pan. Sprinkle over the chilli flakes. Gently stir so the pasta gets coated in all the flavors and starts to soften.
- Simmer: Pour in the water, stir well, then cover the pan with a circle of baking paper (cartouche). Let it simmer gently for about 15 minutes, until the pasta is nearly cooked.
- Add greens & butter: Remove the cartouche. Add cavolo nero and butter. Stir everything gently until the greens are wilted and fully cooked.
- Serve: Plate up the chicken and veggie linguine. Top with a little grated Parmesan if you’d like. Enjoy warm and cozy.
