Ingredients
2 chicken breasts
1 tsp cumin seeds (ground)
1 tsp coriander seeds (ground)
150g cherry tomatoes, chopped
300g cooked new potatoes, chopped
1 shallot, finely chopped
3 garlic cloves, finely chopped
15g butter
125ml chicken stock (or water)
Ground rock salt
Ground black pepper
Lemon zest
Rapeseed oil
Rocket leaves (optional, for garnish)
Directions
- Season the chicken breasts with salt, pepper, and lemon zest. Set aside.
- Heat a pan with rapeseed oil over medium heat. Cook the chicken until golden. Add butter and baste. Once done, remove and let rest.
- Sauté the shallot and garlic in the same pan. Add ground coriander and cumin, cook until fragrant.
- Add chopped tomatoes and cook until soft.
- Deglaze the pan with chicken stock, stir in the chopped potatoes, and let the sauce reduce by half. Season to taste.
- Return the chicken to the pan, stir to coat with sauce, and cook for another 2–3 minutes.
- Serve: plate the vegetables, place chicken on top, drizzle with sauce, and garnish with rocket leaves.
