This light and flavorful dish is perfect for warm days and easy to prepare. With the crisp bite of apples, aromatic fennel, creamy feta, and zesty lemon, it’s a simple yet elegant salad that’s as calming to make as it is delicious to eat.

Ingredients

  • 1x shallot, peeled and finely chopped

  • 3x garlic cloves, peeled and finely grated

  • 1x tsp smoked paprika

  • 200g feta cheese, cut into cubes

  • 1x fennel bulb, thinly sliced

  • 1x Gala apple, deseeded and sliced

  • Juice of ½ a lemon

  • Rocket leaves

  • Olive oil

  • Ground rock salt

  • Ground black pepper

Directions

  • Heat olive oil in a pan over medium heat. Sauté the shallot and garlic until fragrant. Stir in the smoked paprika, season with salt and pepper, then set aside to cool.
  • Mix the cubed feta with the cooled sauce to marinate. Set aside.
  • In a bowl, combine sliced fennel and apple. Season with salt, pepper, lemon juice, and a drizzle of olive oil. Toss gently.
  • Place rocket leaves in a serving bowl. Add the fennel and apple salad on top, and serve with the marinated feta on the side or mixed in.
