Ingredients:

➡️For Pork Meatballs:

  • 500g pork mince (5% fat)
  • 10g ginger, finely grated
  • 2 garlic cloves, finely grated
  • 1 egg yolk • 20g panko breadcrumbs
  • 1/2 tsp smoked paprika
  • Sea salt flakes
  • Ground black pepper

➡️For Sauce:

  • 1 brown onion, peeled and finely chopped
  • 70g chestnut mushrooms, finely chopped
  • 2 tbsp soy sauce
  • 3 tbsp red wine
  • 1 tbsp mirin
  • 1 tbsp muscovado sugar
  • 1 tsp corn flour
  • 50ml water
  • Olive oil
  • Sea salt flakes
  • Ground black pepper

➡️For Garnish:

  • 1 spring onion, chopped

Serve 2

Instructions:

  1. In a mixing bowl, combine all the pork meatball ingredients. Beat the mixture for about 5 minutes and shape it into 8 meatballs.
  2. Heat a frying pan with some olive oil over medium heat. Fry the meatballs until golden brown, then transfer them to a plate and set aside.
  3. In the same pan, fry the chopped onion and mushrooms until they become soft and fragrant. Return the meatballs to the pan.
  4. In a separate bowl, mix soy sauce, red wine, mirin, and muscovado sugar. Pour this mixture over the meatballs and cook for approximately 5 minutes.
  5. use the same bowl, mix corn flour with water until smooth. Pour this mixture into the pan and cook for an additional 2-3 minutes until the sauce thickens.
  6. Sprinkle finely chopped spring onions over the dish for garnish. Enjoy your delicious teriyaki pork meatballs!
