Ingredients
- For the pork chops:
2 boneless pork chops
100g carrot, peeled and chopped
1 sprig of thyme
3 garlic cloves, crushed
30g butter, cut into cubes
Ground rock salt
Ground black pepper
- For the lentils:
140g green puy lentils, washed
280ml water
100g streaky bacon, chopped
2 shallots, finely chopped
100g chestnut mushrooms, sliced
2 garlic cloves, grated
8g ginger, grated
½ tsp cayenne pepper
10g butter
Ground rock salt
Ground black pepper
Rapeseed oil
Fresh parsley, finely chopped (for garnish)
Directions
- Cook the lentils:
🔹Heat some rapeseed oil in a sauté pan over medium heat.
🔹Fry the bacon, shallots, garlic, and ginger until fragrant.
🔹Add the mushrooms, cayenne pepper, and cook until soft.
🔹Stir in the lentils and pour in the water. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes. - Season the pork chops:
🔹Rub the pork chops with rock salt and black pepper.
🔹Drizzle with rapeseed oil. - Cook the pork chops:
🔹Heat an ovenproof frying pan over medium heat.
🔹Place the pork chops in the pan, with the chopped carrots alongside.
🔹Add the thyme and crushed garlic to the pan, along with butter cubes.
🔹Frequently baste the pork chops with the butter until both sides are golden brown. - Roast the pork chops:
🔹Transfer the pan to an oven preheated to 180°C (fan) and roast for about 15 minutes. Seasoning the carrot with ground rock salt and ground black pepper. - Finish the lentils:
🔹Once the lentils are cooked, stir in the butter and season with rock salt and black pepper. - Serve:
🔹Place the lentils in a bowl and slice the pork chops on top.
🔹Drizzle the sauce from the pan over the pork.
