simple one-pan chicken dinner—easy, cozy, and packed with flavor. Juicy chicken breasts are pan-seared and basted with butter, served over a rich sauce of cherry tomatoes, spices, and potatoes.

Ingredients

  • 2 chicken breasts

  • 1 tsp cumin seeds (ground)

  • 1 tsp coriander seeds (ground)

  • 150g cherry tomatoes, chopped

  • 300g cooked new potatoes, chopped

  • 1 shallot, finely chopped

  • 3 garlic cloves, finely chopped

  • 15g butter

  • 125ml chicken stock (or water)

  • Ground rock salt

  • Ground black pepper

  • Lemon zest

  • Rapeseed oil

  • Rocket leaves (optional, for garnish)

Directions

  • Season the chicken breasts with salt, pepper, and lemon zest. Set aside.
  • Heat a pan with rapeseed oil over medium heat. Cook the chicken until golden. Add butter and baste. Once done, remove and let rest.
  • Sauté the shallot and garlic in the same pan. Add ground coriander and cumin, cook until fragrant.
  • Add chopped tomatoes and cook until soft.
  • Deglaze the pan with chicken stock, stir in the chopped potatoes, and let the sauce reduce by half. Season to taste.
  • Return the chicken to the pan, stir to coat with sauce, and cook for another 2–3 minutes.
  • Serve: plate the vegetables, place chicken on top, drizzle with sauce, and garnish with rocket leaves.
