Ingredients:

For the Cauliflower Curry:

  • 1 cauliflower, trimmed
  • 2 tomatoes, chopped
  • 1 red onion, peeled and sliced
  • 2 garlic cloves, peeled and finely chopped
  • 10g ginger, peeled and finely chopped
  • 1 tsp coriander seeds, toasted and ground
  • 1 tsp cumin seeds, toasted and ground
  • 1 tsp fennel seeds, toasted and ground
  • 1 red chili, chopped
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • Handful of spinach
  • 20g coconut cream
  • 200ml water
  • Rapeseed oil
  • Sea salt flakes
  • Ground black pepper

For the Pork Tenderloin:

  • 500g pork tenderloin
  • Sprig of rosemary
  • 2 garlic cloves
  • 10g butter
  • Rapeseed oil
  • Sea salt flakes
  • Ground black pepper

For the Honey Soy Sauce:

  • 1/2 tsp Chinese five-spice
  • 3 tsp dark soy sauce
  • 1 tbsp honey
  • 1 tsp white wine

For Garnish:

– Fine chopped coriander 🍽️

Method:

1. Prepare Cauliflower Curry:

  • Heat rapeseed oil in a sauté pan over medium heat.
  • Fry sliced onion, chopped garlic, and ginger until fragrant.
  • Add chopped tomatoes, stir, and cook until tomatoes are soft.
  • Add ground coriander seeds, cumin seeds, fennel seeds, turmeric powder, and chili powder. Mix well.
  • Pour in water and coconut cream, stir until boiling and coconut cream is dissolved.
  • Add trimmed cauliflower, stir well, cover with a lid, and simmer for about 30 minutes.
  • Season with salt and pepper. Add chopped red chili and spinach, stir well.

2. Prepare Pork Tenderloin:

  • Season pork tenderloin with salt.
  • Heat rapeseed oil in a frying pan over medium heat.
  • Fry the pork tenderloin until golden brown.
  • Add garlic cloves, rosemary, and butter to the pan. Baste the pork a few time
  • Prepare honey soy sauce by mixing all the sauce ingredients. Pour it over the pork tenderloin.
  • Cover with a lid and roast in the oven at 180°C with a fan for about 20 minutes.
  • Baste the tenderloin with the honey soy sauce, uncover, and roast for an additional 5 minutes.

3. Serve:

  • Place the cauliflower curry in a bowl.
  • Add sliced pork tenderloin on top.
  • Sprinkle with fine-chopped fresh coriander for garnish.
