Ingredients

  • For the burger:
  • 500g beef mince (5% fat)

  • 3 garlic cloves, finely grated

  • 8g ginger, finely grated

  • ½ tsp cayenne pepper

  • 1 tsp red miso paste

  • 1 egg

  • Ground rock salt & black pepper (to taste)

  • For the salad:
  • 1 cos lettuce, washed & shredded

  • 1 red onion, thinly sliced

  • Handful of coriander, chopped

  • 100g cherry tomatoes, chopped

  • For the dressing:
  • 1 tsp Dijon mustard

  • 1 tbsp balsamic vinegar

  • 3 tbsp extra virgin olive oil

  • Ground rock salt & black pepper (to taste)

Directions

  • Prepare the burgers: In a bowl, mix all burger ingredients until well combined. Shape into 4 small patties and set aside.
  • Cook the burgers: Heat an ovenproof pan over medium heat with some rapeseed oil. Sear the patties on both sides until golden brown. Transfer to a preheated oven at 180°C (fan) and roast for 20 minutes.
  • Make the dressing: In a small bowl, whisk together Dijon mustard, balsamic vinegar, olive oil, salt, and black pepper.
  • Prepare the salad: Toss lettuce, coriander, red onion, and cherry tomatoes in a bowl. Drizzle with dressing and mix well.
  • Assemble & serve: Divide the salad into bowls and place the cooked burgers on top. Enjoy!
