Ingredients
2 chicken breasts, sliced into strips
255 g cherry tomatoes, diced
1 red bell pepper, deseeded and sliced
1 shallot, finely chopped
3 garlic cloves, grated
1 tbsp plain flour
1 tsp smoked paprika
1 tsp cayenne chilli
75 g baby spinach
100 ml double cream
Parmesan cheese, finely grated
Olive oil
Sea salt flakes
Ground black pepper
Chives, finely chopped (for garnish)
Directions
- Prepare the chicken
Season the chicken strips with sea salt flakes and black pepper. In a bowl, mix the plain flour, smoked paprika, and cayenne chilli. Coat the chicken evenly in the flour mixture. - Cook the chicken
Heat a frying pan over medium heat with a little olive oil. Fry the chicken until golden brown on all sides. Remove from the pan and set aside. - Build the sauce
In the same pan, add the chopped shallot and grated garlic. Cook gently until fragrant. Add the diced tomatoes and cook until softened. Stir in the sliced bell pepper and cook until tender. - Make it creamy
Pour in the double cream and stir well. Bring to a gentle simmer, then return the chicken to the pan. Cook until the chicken is fully cooked and coated in the sauce. - Finish the dish
Add the baby spinach and stir until just wilted. Season with sea salt flakes and black pepper. Stir in grated Parmesan cheese to taste. - Serve
Transfer to bowls, garnish with extra Parmesan and finely chopped chives. Serve with rice or pasta.
