Ingredients:
- 500g beef mince (5% fat)
- 1 red onion, finely chopped
- 270g carrot, finely chopped
- 70g celery stick, chopped
- 4 garlic cloves, grated
- 10g ginger, grated
- 1 tsp cayenne pepper powder
- 2 tsp light soy sauce
- 1 tbsp white miso paste
- 1 tsp rapeseed oil
- Ground rock salt (to taste)
- Ground black pepper (to taste)
- 100g spaghetti
- Fresh parsley, finely chopped (for garnish)

Method:
1. Cook the Vegetables:
Heat some rapeseed oil in an oven-proof sauté pan over medium heat. Add the chopped carrot, onion, celery, garlic, and ginger. Fry until softened and fragrant, then stir in the cayenne pepper.
2. Add the Beef:
Add the beef mince to the pan, mix well with the vegetables, and stir in the miso paste until it dissolves.
3. Roast the Beef:
Cover the pan with a lid and place it in a preheated oven at 150°C (fan). Roast for about 40 minutes.
4. Cook the Spaghetti:
While the beef is roasting, cook the spaghetti according to package instructions. Drain and set aside.
5. Season and Serve:
Remove the pan from the oven and season with salt, black pepper, and soy sauce. Serve the spaghetti in bowls, top with the roasted miso beef mince, and garnish with chopped parsley.
