This flavorful one-pan dish is a perfect harmony of savory and sweet, combining tender pork with the natural sweetness of apples and the earthy depth of roasted parsnips. Ingredients

  • 250g pork tenderloin

  • 1 shallot, peeled

  • 3 garlic cloves, peeled

  • 50g butter, cubed

  • 2 gala apples, deseeded and chopped (250g)

  • 2 parsnips, peeled and chopped (150g)

  • Handful of chopped tarragon

  • 1 tsp red miso paste

  • 10ml water

  • Ground rock salt

  • Ground black pepper

  • Rapeseed oil

Directions

  • Prepare the Pork: Season the pork tenderloin with rock salt and black pepper. Drizzle some rapeseed oil on top and set it aside.
  • Sear the Pork: Heat an ovenproof pan (like a 12-inch cast iron skillet) over medium heat. Add the pork tenderloin, shallot, garlic, and a bit of butter to the pan. Sear the pork on all sides.
  • Cook the Parsnip: Push the pork to one side of the pan and add the chopped parsnip with some butter and seasoning. Stir the parsnip to coat it in the butter, then move it to the side of the pan.
  • Baste the Pork: Add more butter to the pan and baste the pork a few times. Move the pork back to the side.
  • Cook the Apples: Add the chopped apples to the pan and cook for 2-3 minutes.
  • Roast: Transfer the pan to the oven (preheated to 180°C with fan) and roast for about 20 minutes.
  • Prepare the Sauce: Once done, remove the pork from the pan and set it aside to rest. Return the pan to the stove over medium heat. Add the miso paste, a bit of butter, chopped tarragon, and a splash of water(10-15ml) Stir until the miso dissolves and the sauce forms.
  • Serve: Slice the pork tenderloin into portions. Plate the roasted apples and parsnips, then add the pork on top. Drizzle the sauce over the pork and garnish with a sprinkle of tarragon.
