Ingredients
450g beef steak pieces
200g carrots, peeled and chopped
250g chestnut mushrooms, chopped
2 shallots, finely chopped
4 garlic cloves, finely chopped
8g ginger, finely chopped
1 tbsp white miso paste
1 star anise
2 bay leaves
100ml red wine
500ml water
120g macaroni
30g parsley, finely chopped (reserve some for garnish)
3 tsp dark soy sauce
1 tsp light soy sauce
Rapeseed oil
Ground rock salt
Ground black pepper
Grated Parmesan cheese (for garnish)
Directions
- Season the Beef: Mix the beef steak pieces with ground rock salt, black pepper, and a drizzle of rapeseed oil. Set aside.
- Brown the Beef: Heat an ovenproof frying pan over medium heat. Fry the beef until golden brown and the liquid evaporates. Add the garlic, ginger, and shallots, cooking until fragrant.
- Deglaze and Add Vegetables: Pour in the red wine to deglaze the pan, then stir well. Add the carrots, mushrooms, miso paste, and water. Stir until the miso dissolves.
- Oven Cooking (Part 1): Add the star anise and bay leaves. Cut a circle of baking paper to cover the surface of the stew (cartouche). Place the pan in the oven at 150°C (fan) and roast for 1 hour.
- Add Macaroni:(Part 2): Remove the pan from the oven. Discard the star anise and bay leaves. Stir in the macaroni, parsley, and dark soy sauce. Cover with the baking paper again and return to the oven for another 40 minutes.
- Final Seasoning: Remove the pan from the oven and discard the baking paper. Stir in the light soy sauce, parsley, and black pepper. The dish is now ready to serve.
- Garnish: Serve the beef stew with macaroni in bowls. Top with chopped parsley and grated Parmesan cheese.
