One-Pot Creamy Chicken Dinner – A simple, cozy and comforting recipe made in just one pan. Perfect for a peaceful night in,weeknights, date nights, or whenever you want something hearty and homemade.

Ingredients

  • 400g baby potatoes, cooked and halved

  • 100g asparagus

  • 4 garlic cloves, peeled and halved

  • 1 sprig of thyme

  • 2 chicken breasts

  • 70g double cream

  • 20g butter, cubed

  • Rapeseed oil

  • Ground rock salt

  • Ground black pepper

  • Rocket leaves, for serving

Directions

  • Sear the Chicken: Seasoning the chicken breast with ground rock salt and ground black pepper and heat an oven-safe frying pan over medium heat with a drizzle of rapeseed oil. Place the chicken breasts in the pan and sear until golden on both sides.
  • Add Aromatics and Butter : Add the garlic cloves, thyme, and a few cubes of butter. Baste the chicken with the melted butter as it cooks, letting the flavors infuse.
  • Add Potatoes : Push the chicken to the side of the pan. Add the halved baby potatoes and a bit more butter. Stir gently so the potatoes are coated in the butter. Season with ground rock salt and black pepper. Let everything brown slightly.
  • Cream and Asparagus : Pour in the double cream and stir to combine. Add the asparagus, nestling it into the sauce. Transfer the pan to a preheated oven at 180°C (fan) and roast for about 15 minutes.
  • Serve : Slice the chicken breasts and serve them over the creamy potatoes and asparagus. Drizzle some of the sauce over the top and finish with fresh rocket leaves.
