Ingredients
2 chicken breasts, diced
1 shallot, sliced
3 garlic cloves, grated
8g ginger, grated
100g carrot, sliced
1 red bell pepper, sliced
50g baby spinach
1/2tsp cayenne pepper
2 tsp light soy sauce
120g cooked macaroni
80ml pasta water
Ground rock salt
Ground black pepper
Rapeseed oil
Directions
- Season the diced chicken with ground rock salt, black pepper, grated ginger, garlic, and a little rapeseed oil. Set aside.
- Boil water in a pot, add salt, and cook the macaroni. Once done, drain the water and set aside, saving 80ml of pasta water.
- Heat a frying pan over medium heat with some rapeseed oil. Fry the marinated chicken until golden brown, then push it to the side of the pan.
- In the same pan, add the sliced shallot, red pepper, and carrot. Add a little more oil if needed. Cook until the vegetables are soft and fragrant, then mix them with the chicken.
- Pour in 80-100ml of the saved pasta water and stir well.
- Add the cooked macaroni to the pan and mix everything together.
- Finally, add the baby spinach and stir until it wilts. Season with light soy sauce to taste, and it’s ready to serve!
