A comforting dish of smashed new potatoes with golden mozzarella cheese and a rich, spicy miso sauce. Soft on the inside and crispy on the outside, this cozy recipe is perfect for slow evenings and mindful meals.

Ingredients

  • 500g new potatoes (cooked)

  • 1 sprig of thyme

  • 50g mozzarella cheese

  • Sea salt flakes

  • Ground black pepper

  • Rapeseed oil

  • For the Spicy Miso Sauce:
  • 50g spring onion, finely chopped

  • 3 garlic cloves, grated

  • 1 tbsp red miso paste

  • 1 tsp cayenne pepper

  • 130ml water

  • 1 tsp Dijon mustard

  • Rapeseed oil

  • Ground rock salt

  • Ground black pepper

  • Optional for Serving:
  • Rocket leaves (arugula)

Directions

  • Cook the Potatoes: Bring a pot of water to a boil. Season with sea salt flakes and add the thyme and new potatoes. Simmer with the lid on for about 20 minutes until tender. Drain and set aside.
  • Prepare the Spicy Miso Sauce: Heat a small frying pan with rapeseed oil over medium heat. Sauté the chopped spring onion and grated garlic until fragrant. Stir in miso paste and cayenne pepper and cook until aromatic.
  • Deglaze & Finish the Sauce: Add water to deglaze the pan, stirring well. Remove from heat, then mix in Dijon mustard. Season with ground rock salt and black pepper to taste. Set aside.
  • Crisp the Potatoes: In an ovenproof skillet, heat some rapeseed oil over medium heat. Add the cooked potatoes and fry until golden brown.
  • Smash & Season: Use a masher or spoon to gently smash the potatoes in the pan. Season with ground rock salt and black pepper and mix well.
  • Add Cheese & Roast: Sprinkle mozzarella cheese evenly over the potatoes. Roast in a preheated oven at 180°C (fan) for about 20 minutes until golden and melty.
  • Serve: Top with fresh rocket leaves (if using) and drizzle with the spicy miso sauce. Serve immediately.
