
Ingredients:
➡️Fried Tofu:
- 280g firm tofu, cut into strips
- Olive oil for frying
➡️Tomato Salad:
- 250g piccolo cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- Handful of chopped coriander
- 1 red chili pepper, deseeded and finely chopped
- 1 tbsp capers
- Sea salt flakes
- Ground black pepper
➡️Garlic Rosemary Oil:
- 3 tsp olive oil
- 2 garlic cloves, finely chopped
- Sprig of rosemary
➡️Spicy Salt:
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp rock salt
Instructions:
1. Prepare Spicy Salt:
- Toast cumin seeds and mustard seeds until cracked.
- Grind them in a mortar and pestle with rock salt. Set aside.
2. Make Garlic Rosemary Oil:
- Heat olive oil in a pan over medium heat.
- Fry chopped garlic and rosemary leaves until fragrant. Set aside.
3. Tomato Salad:
- Mix cherry tomatoes, red onion, coriander, and capers.
- Season with salt and pepper.
- Add the garlic rosemary oil and mix well. Set aside.
4. Fry Tofu:
- Heat olive oil in a frying pan over medium heat.
- Fry tofu strips until golden brown and crispy.
5. Assemble:
- Place fried tofu in the center of a plate.
- Surround it with the tomato salad.
