Braised Beef Tomato Stew is a cozy and comforting dish perfect for cold weather. Tender beef steak pieces are slowly braised in a rich blend of tomatoes, red wine, and aromatic herbs like thyme and bay leaves, allowing the flavors to develop into a deeply satisfying stew. A hint of ginger and star anise adds a subtle warmth and complexity, while freshly chopped coriander brings a bright, fresh finish. This stew is hearty and versatile, ideal for serving with pasta, rice, or crusty bread to soak up all the delicious sauce. Ingredients

  • 450g beef steak pieces

  • 300g tomatoes, chopped

  • 80g leek, chopped

  • 60g celery, chopped

  • 150g carrot, peeled and chopped

  • 2 shallots, peeled and chopped

  • 4 garlic cloves, peeled and chopped

  • 10g ginger, peeled and chopped

  • 1 star anise

  • 2 bay leaves

  • 1 sprig of thyme

  • 250ml red wine

  • Rapeseed oil

  • Ground rock salt

  • Ground black pepper

  • Coriander, finely chopped (for garnish)

Directions

  • Season the beef: Sprinkle the beef steak pieces with ground rock salt and black pepper. Set aside.
  • Brown the beef: Heat some rapeseed oil in an ovenproof sauté pan over medium heat. Fry the beef until browned and the liquid has evaporated. Remove the beef and set aside.
  • Cook the vegetables: In the same pan, add the celery, leek, garlic, and ginger. Fry until fragrant, adding more oil if needed.
  • Add tomatoes and beef: Stir in the chopped tomatoes and cook until softened. Return the beef to the pan, then add the chopped carrots and mix everything well.
  • Add wine and herbs: Pour in the red wine, stir, then add the star anise, bay leaves, and thyme. Cover the pan with a lid.
  • Roast: Transfer the pan to a preheated oven at 150°C (fan) and roast for about 90 minutes.
  • Season and serve: After roasting, remove the pan from the oven. Add the chopped coriander and adjust the seasoning with more salt and pepper if needed. Serve with pasta, rice, or bread.
