
Ingredients:
- 1 shallot, peeled and finely chopped
- 2 garlic cloves, peeled and finely chopped
- 1 tin chickpeas (400g with water)
- 80g cavolo nero, chopped
- 2 tortilla wraps
- 2 tbsp harissa paste
- Olive oil
- Sea salt flakes
- Ground black pepper
- Coriander, finely chopped for garnish

Method:
1. Prepare Aromatics:
- Heat a frying pan with some olive oil over medium heat.
- Add the finely chopped shallot and garlic to the pan. Sauté until fragrant.
2. Introduce Cavolo Nero:
- Once the aromatics are fragrant, add the chopped cavolo nero to the pan.
3. Infuse Flavor with Harissa:
- Stir in the harissa paste, ensuring it’s well mixed with the ingredients in the pan.
4. Add Chickpeas:
- Drain the water from the chickpeas and add them to the pan.
- Stir well to combine all ingredients.
5. Season to Perfection:
- Season the mixture with salt and pepper to taste. Adjust according to your preferences.
6. Prepare Toasted Tortilla Triangles:
- While the chickpea mixture is simmering, toast the tortilla wraps.
- Once toasted, cut them into triangles.
7. Assemble and Garnish:
- Place the toasted tortilla triangles on a plate.
- Pour the chickpea and cavolo nero mixture on top.
- Sprinkle finely chopped coriander as a garnish.
